Pasture raised, grass fed Diced Spring lamb
from Farmer Matty of Suck valley farm in Roscommon
The Carroll family have been farming on the banks of the Suck river for over 200 years.
Matthew Carroll spent years as a civil engineer but the land called him home and he now runs the farm with his father and family, looking after a small flock of 120 sheep (Suffolk and Galway breeds).
These Sheep are pasture raised, feeding naturally on a diet of fresh grass, clover, herbs and treats from the hedgerow.
We only offer meat at Mad Yolk Farm from local farmers that align with our standards for flavour, animal welfare and environmentally responsible farming.
Diced Lamb is best cooked slow in meals like Curry, Stew or Shephard's Pie
